Soya Chunks-Aloo Curry

(Dhaba Style)

Ingredients:

Soya Chunks (200 grams)

Medium Sized Potatoes (3)

Medium sized onions (2)

Tomatoes small (3)

Gingner-Garlic Paste (1 Tbspn)

Spices:

Turmeric Powder (1 Tspn)

Kashmiri Red Chilli Powder ( 1 tbspn)

Red Chilli Powder (1 taspn)

Coriander Powder / Dhaniya Powder (2 tspns)

Cumin/Jeera Powder (1 teaspn)

Garam Masala ( 1.5 tspn)

Kasoori Methi

Khade Masale ( Cardamom, Bay Leaf,clove, Cinnamon, Dry red chilli)

Method:

  1. Keep water for boiling , when it comes to boil add soya chunks to it. Give it a single boil, take it out and wash under running water and keep it aside in drinking water for 15 mins.
  2. Meanwhile nicely chop the onions and fry it till the colour changes to dark golden brown. Keep it aside until it cools down. (This is the trick dhabbe walas in India use)
  3. Use this time to fry potatoes cut into one inch size till it is partly cooked & golden brown.
  4. Now, separately grind the friend onions and tomatoes and keep the mixtures aside.
  5. Heat 2 table spoons of oil in the Kadhai, add khade masale to it, now add onion paste (keep the flame low) , ginger-garlic paste.
  6. Cook till the ginger garlic is no more raw.
  7. Now, it’s time to add powdered spices .
  8. Add Tomato puree. Cook till it starts to leave oil (this is the the sign of nicely cooked gravy).
  9. Now squeeze the water from soya chunks and add to the gravy along with fried potatoes.
  10. At this point add boiled water into it according to your own desired thickness.
  11. Cover the lid cook for 7-8 mins.
  12. Finally, garnish it with Kasoori Methi & some fresh coriander)
  13. And yes, don’t forget to serve !!
